1 cup almond flour
1/2 cup unsalted butter (softened)
1/3 + 1/2 cup Sweet Like Sugar
2 tablespoon cocoa powder
1 large egg
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Step 1: Preheat the oven to 350°F/180°C. Line a baking sheet with parchment paper and set aside.
Step 2: In a blender, add 1/2 cup Sweet Like Sugar and pulse until it is powdered. Transfer the powdered sugar to a shallow dish and spread evenly, set it aside.
Step 3: In a mixing bowl, mix unsalted butter, egg, Sweet Like Sugar and vanilla extract until combined.
Step 4: Further add the dry ingredients, your almond flour, cocoa powder, baking soda, and salt. Mix until you've reached a nice cookie dough consistency.
Step 5: Using a cookie scoop, scoop about 2 tablespoons of cookie dough, roll it in your palm and coat with powdered sugar. Transfer it to a prepared baking sheet spacing 2-inch apart each-other.
Step 6: Bake for about 10 - 12 minutes until cracks begin to form on the outside of the cookies, they should still be soft inside.
Step 7: Remove cookies from the oven and let them cool for 5 minutes on a baking sheet before transferring to a wire rack and let cool for about 10 minutes. The cookies may look under-baked but they will set as they cool down.
Step 8: Once the cookies have cooled down completely, sprinkle them with your powdered Sweet Like Sugar and serve. If you manage to have any left, store them in an airtight container.
