Keto Raspberry and Cream Panna Cotta

Ingredients:

- 3 ½ cups heavy cream
½ cup water
⅓ cup Sweet Like Sugar
2 envelopes unflavored gelatin
2 teaspoons vanilla
½ cup Raspberry Jam
¼ cup fresh raspberries
1 small bunch fresh mint

     

    Instructions:

    Step 1: In a medium saucepan, combine the heavy cream, water, Sweet Like Sugar, and vanilla.

    Step 2: Whisk the gelatin into the cream mixture and allow to bloom for 10 minutes.

    Step 3: Place the mixture over medium heat and stir until the mixture begins to steam and the gelatin has melted completely.

    Step 4: Remove from the heat and stir for 5 minutes to cool slightly.

    Step 5: Pour into 8 small bowls or glasses and cover them with plastic wrap.

    Step 6: Place in the refrigerator and chill until set, about 2 hours.

    Step 7: Top each serving of panna cotta with 1 tablespoon of Raspberry Jam, a few raspberries, and mint.
