Ingredients for crust
- 2 ½ cups almond flour
- 1/4 cup Sweet Like Sugar
- ½ cup unsalted butter, melted
- ¼ teaspoon vanilla extract
Ingredients for cheese filling
- 4 oz cream cheese/ mascarpone cheese, softened
- 2 tablespoons Sweet Like Sugar
- 4 oz Raspberry Jam
- ¼ cup heavy cream
- 1 teaspoon vanilla extract
Ingredients for topping
- 1 cup assorted berries
- 1 sprig mint leaves
InstructionsStep 1: Preheat oven to 350*F. Grease 4-inch mini tart pans with butter and set aside.
Step 2: In a large mixing bowl, add the ingredients for crust and mix with spatula until the mixture is crumbly.
Step 3: Divide the crust mixture equally into 6 mini tart pans. Gently press with fingers to form crust. Bake for about 10 minutes until lightly golden. Remove from oven let it cool.
Step 4: Meanwhile prepare the cheese filling. In a large mixing bowl, using hand mixer, beat together cream cheese/ mascarpone cheese, Sweet Like Sugar and Raspberry Jam until fluffy and creamy for about 2 minutes.
Step 5: Further add heavy cream and vanilla extract and beat until creamy for about 2 minutes.
Step 6: Scoop the cheese filling into each prepared crust about 3 tablespoons. Top the cheese filling with few assorted berries and mint leaves in each tart. Refrigerate the fruit tarts for an hour and serve chilled.
